Cantucci or cantuccini or Prato biscuits are one of the major confectionery prides of Tuscan cuisine. They are dry almond biscuits, obtained by cutting a piece of still hot dough into slices, then dried out in the oven. They are among the most classic end of meal of the Tuscan gastronomic tradition, especially when paired with Vin Santo. We propose them in the classic version, with almonds.  A recipe handed down for generations.
