Carnival menu

Dear guests,

a new beginning and a new year, the menu we offer you is a winter tale that winks at the carnival. A childhood memory, when as children we “made pork” at home and for a few days we did nothing but run to cook and clean, divide and salt. Then you would go outside the house with the cold piercing your skin and if you were lucky you would collect a glass of snow and then put sugar and wine in it. In those days the snack was bread and sausage or soppressata, what a taste. And then the carnival, with fried cakes and honey. Simple yet intense joys, unchanged over time. This menu sinks into those memories, because as always, everything, before reaching the hands that will make it, must find life in the mind and heart. Or as Leonardo said: “those who fall in love with practice without science are like the helmsman who enters a ship without rudder or compass, who is never certain where he is going”.
